An Exploration of Canadian Celebrity Chef Restaurants at Toronto Pearson International Airport
Part 5: Twist - Owned by Celebrity Chef Roger Mooking

This is Part 5 of my multi-part series on restaurants at Toronto Pearson International Airport that are owned by celebrity chefs, that includes my personal assessment of the whole dining experience. For a brief exploration of the concept of a celebrity chef, check out Part 1.
Twist - Terminal 1 (Domestic)
For my return home from Waterloo, Ontario, I had some time to explore a final celebrity chef restaurant in this series prior to boarding my flight to Regina. That would be Twist, located at Terminal 1 (Domestic) following security near gate D36 and owned by Roger Mooking. Open daily from 5:00 am to 9:00 pm, Twist offers its customers comfort food with a “global twist,” inspired by a celebration of Toronto’s multicultural heritage with strong food influences from around the world. Breakfast is served from opening hours to 9:30 am, after which the restaurant begins serving afternoon and evening food.
Mooking is an award-winning celebrity chef originally from Trinidad and Tobego before moving to Canada at age 5 with his family. He grew up in Edmonton, Alberta immersed in the restaurant business and soon gained an appreciation for the multicultural influences to be found there. Eventually he moved to Toronto for culinary school at George Brown College before working at the Fairmont Royal York hotel in downtown Toronto. Mooking then became Executive Chef and co-owner of Kultura Social Dining and Nywood Restaurant before ultimately opening Twist to currently function as its Executive Chef. In his role as celebrity chef, Mooking was the host of the television shows Heat Seekers and Man Fire Food, while also serving as a judge on Chopped Canada and Top Chef Canada.

Looking at the wide array of appetizing options that represent the global diversity of food expressions found on Earth, I eventually settled on sampling the fried chicken with french fries and a dipping sauce for my meal. Of course, the food was fantastic with the chicken perfectly cooked with a nice crispy exterior to be expected. It was also well-seasoned with a bit of heat that came from the chilli flavouring of the skin. While it was a bit on the expensive side for what I received, I still enjoyed the meal very much and would be happy to return there again.
It would be interesting to find out how Twist’s other food offerings from different regional perpsectives fare in comparsion to what I experienced with this meal. We shall see!
